pistachio pesto

this is amended from rachel ray- 365 no repeats

1/2 cup shelled pistachio nuts (roast in skillet for a couple of minutes)
1 cup flat leaf parsley
1/2 cup fresh mint
1/3 cup freshly grated parmesan
1/3 cup olive oil

put everything but olive oil in a food processor. pour in the oil as you run the processor. let it rip until it looks sufficiently mushed up.

served with whatever pasta you like!

we did!

alright- day one- back to the gym. it wasn't as busy as i thought it would be. i guess the nice thing about having a membership at a cruddy gym is that everyone else goes to the brand new super gyms with pools and basketball courts and escalators. we only saw 3 of the regulars from last spring/ summer. abdominator, spin dude, and old guy were there. i guess we'll have to look around for new regulars and give them appropriate nick names. thirty minutes on the elliptical= 350 calories burned. lets see if we can keep this up.

oh- the fun thing was that i was watching ME television (austin's version of mtv). i started out with a little numero from grupo fantasma- it really got me in the groove. later on there was "discoballworld" by david garza and a pre-9/11 video from dinosaur jr that was filmed in nyc. there was also some weirdo video with a toothy, long armed alien thing with a slightly less toothy women with a snake that came out of her mouth. it was filmed at a carnival and by a river- very weird.

will we or won't we

will we make it to the gym tomorrow morning? it means we have to wake up at 6am and get out of the house by 6:10am. i have set the alarm, now lets see how motivated we are! more details tomorrow. . .

new project

alright- i know it has been many months since my last post. keeping this updated is one of my new years resolution. anyhoo- i bought myself a new project today. i really super love this vanity- just imagine it with a fresh coat of paint.
